A Breakdown of Beer Styles: From IPAs to Sours

7/30/2025

Walk into any local brewery and you’ll likely be handed a menu filled with terms like “Hazy IPA,” “Stout,” “Berliner Weisse,” or “Pale Ale.” It’s exciting—until it’s overwhelming. What do all these styles mean, and how do you know what you’ll like?
Whether you’re new to craft beer or looking to expand your palate, this guide breaks down the most popular beer styles, what makes them distinct, and what to expect with your first sip.
No fluff. Just beer—explained.

🍺 Pale Ale: Where It All Starts
  • Color: Golden to amber
  • Taste: Balanced, hoppy but not overwhelming
  • Try it if: You're new to hops but want a flavorful beer
Pale ales are the backbone of modern craft beer. They’re clean, approachable, and have just enough bitterness to keep things interesting. Think of them as the gateway to hoppier styles.
Popular example: Sierra Nevada Pale Ale (California)

🌲 IPA (India Pale Ale): Hops on Full Blast
  • Color: Pale gold to copper
  • Taste: Bold bitterness, citrus, pine, tropical fruits
  • Try it if: You’re into bold flavors and dry finishes
IPAs are the darlings of the craft beer world. The bitterness comes from a heavy dose of hops, which also deliver aromas of citrus, resin, stone fruit, and spice. Within IPAs, there are subtypes:
  • West Coast IPA: Crisp, bitter, piney
  • Hazy or New England IPA: Juicy, soft, lower bitterness
  • Double/Imperial IPA: Higher alcohol, more malt and hops
Warning: If you hate grapefruit or strong bitterness, this might not be your style—yet.

🌾 Wheat Beer: Light, Cloudy, and Easy-Drinking
  • Color: Pale to golden
  • Taste: Soft, bready, sometimes citrusy or spicy
  • Try it if: You want something mellow and refreshing
Made with a significant amount of wheat, these beers are hazy in appearance and smooth in texture. Common types include:
  • Hefeweizen (Germany): Notes of banana and clove
  • Witbier (Belgium): Brewed with orange peel and coriander
Pro tip: Great with brunch or sunny afternoons.

☕ Stout & Porter: The Dark Side of Beer
  • Color: Deep brown to pitch black
  • Taste: Coffee, chocolate, roasted malt
  • Try it if: You enjoy bold, rich flavors
Don’t let the color scare you. While stouts and porters look heavy, many are surprisingly smooth. The difference between the two? Porters tend to be lighter and focus on malt sweetness, while stouts often have roasted, espresso-like bitterness.
Substyles include:
  • Milk Stout: Creamy and slightly sweet
  • Imperial Stout: Strong and boozy
  • Oatmeal Stout: Smooth and mellow

🍋 Sour Ales: The Wild Side
  • Color: Varies widely
  • Taste: Tart, funky, fruity, or vinegar-like
  • Try it if: You like kombucha, wine, or bold flavors
Sours are brewed using wild yeast or bacteria, which give them their signature tang. Some are mouth-puckeringly sour, others are subtly tart and fruity.
Popular styles:
  • Berliner Weisse: Light, tart, low alcohol
  • Gose: Salty, sour, often brewed with citrus or coriander
  • Lambic or Gueuze: Funky, complex, and aged
Warning: Sour beers are polarizing—you’ll either love them or make a face and never try again.

🏆 Bonus Round: Other Styles Worth Knowing
  • Pilsner: Crisp, clean, slightly bitter lager
  • Amber Ale: Malty, balanced, with a caramel backbone
  • Brown Ale: Nutty, smooth, and slightly sweet
  • Kölsch: Light, clean, and refreshing (from Cologne, Germany)
  • Barleywine: High ABV, sweet and complex—sipping beer

🍻 Choosing Your Style: It’s PersonalHere’s the truth: The “best” beer is the one you enjoy drinking. Don’t let trends or hype dictate your choices. The beauty of craft beer is its diversity. Sample widely, ask questions at the taproom, and keep notes on what you like and why.
One pint at a time, you’ll figure out your flavor fingerprint.

Curious about what style pairs best with your favorite food or season? Let us know—we’ll brew up another guide for that. Cheers!
